(Russian beetroot soup)

Borscht is a traditional Russian soup known for its distinctive red color and rich flavor. This delicacy is made from beets, vegetables, and sometimes meat, and it has a delightful balance of sweetness and acidity. Follow this recipe to create your own flavorful borscht and enjoy a hearty Russian meal.

Preperation:

1. Peel and finely chop 1 large onion, 2 carrots, and 2 cloves of garlic. Set aside.
2. Peel and grate 3 medium-sized beets. Set aside.
3. Chop 4 potatoes and 2 celery stalks into small pieces. Set aside.
4. Also, thinly slice 1 small head of cabbage. Set aside.

Ingredients:

– 1 large onion
– 2 carrots
– 2 cloves of garlic
– 3 medium-sized beetroot
– 4 potatoes
– 2 celery stalks
– 1 small head of white
cabbage
– Oil for frying
– 1 litre of vegetable stock
– 1 litre of water
– 1 tsp dried dill
– 1 tsp sugar
– Salt and pepper to taste

Cooking:

1. Värm upp en stor gryta eller kastrull med lite olja på medelvärme.
2. Tillsätt den hackade löken och stek den tills den blir mjuk och genomskinlig.
3. Tillsätt morötterna och vitlöken och fortsätt steka i ytterligare några minuter tills grönsakerna mjuknar.
4. Tillsätt de rivna rödbetorna och låt dem steka med de övriga grönsakerna i ca 5 minuter.
5. Tillsätt de hackade potatisarna, sellerin och vitkålen till grytan. Rör om väl för att blanda alla ingredienser.
6. Häll i 1 liter grönsaksbuljong och 1 liter vatten i grytan. Krydda med 1 tsk torkad dill, 1 tsk socker, salt och peppar efter smak.
7. Låt soppan sjuda på medelvärme i cirka 30-40 minuter, eller tills alla grönsaker är mjuka och smakerna har blandats väl.

Serving tips:

Server the hot borscht soup with a dollop of sour cream and fresh bread. You can also garnish the soup with fresh dill or parsley for extra color and flavor. Borscht is a complete meal on its own, but you can also serve it as part of a larger meal with other Russian dishes.
