Ciorbă de burtă

(Rumänsk sur soppa med oxmagen)

Ciorbă de burtă is a traditional Romanian sour soup known for its rich flavor and unique combination of acidity and saltiness. This soup is made with ox stomach and a range of other ingredients such as vegetables and herbs. Here is a simple recipe to create your own Ciorbă de burtă and enjoy a flavorful and hearty meal.


1. Rinse and clean 500 grams of ox stomach thoroughly. Cut it into smaller pieces.
2. Place the ox stomach in a large pot with enough water to cover it. Bring to a boil and then simmer for about 1-2 hours, or until the brisket is tender and cooked through.
3. In the meantime, you can prepare the vegetables. Peel and dice 2 carrots, 1 large onion and 2 celery stalks. Also chop 1 bell pepper into small pieces. Set aside.


– 500 grams of beef belly
– 2 liters of water
– 2 carrots
– 1 large onion
– 2 celery stalks
– 1 bell pepper
– 2-3 bay leaves
– 1 tsp dried dill
– Salt and pepper to taste


1. When the beef belly is ready, remove it from the pot and let it cool slightly. Then cut it into thin strips or cubes. Set aside.
2. In the same pot, add the prepared vegetables and cook them over medium heat for a few minutes until they soften slightly.
3. Add 2 liters of water, shredded beef belly, 2-3 bay leaves and 1 teaspoon of dried dill to the pot. Season with salt and pepper to taste.
4. Simmer the soup over medium heat for about 30-40 minutes, or until the flavors have blended well and the vegetables are cooked through.

Serving tips:

Serve the hot Ciorbă de burtă with a spoonful of sour cream and fresh bread. You can also garnish the soup with fresh dill or parsley for extra flavor and color. Ciorbă de burtă is a hearty and flavorful soup that can be served as a complete meal or as part of a larger Romanian meal.
